All of our products are made with chili peppers, in three degrees of heat. So how hot do you like it?
MILD – We use a red Fresno pepper, which has a subtle flavor, is beautiful in the jar, and adds only the slightest touch of heat to the vegetables.
GETTING HOTTER – Here you will find the sturdy jalapeno pepper, which takes the heat up a few notches, but not too much for most to enjoy.
HOT – The habanero pepper (reputed to be the world’s hottest) takes over here, and the heat goes way up. Even so we don’t let the heat overwhelm the goodness of the vegetables or the delicious fruitiness of the habanero itself.
CAROLINA COLLARDS
No food is so typical of eastern North Carolina as collard greens. This versatile, hearty, nutritionally packed green is everywhere: in large fields, in backyard gardens, in grocery stores, at farmers’ markets and roadside stands – and on just about every table, humble or grand. Now there is a new way to enjoy collards (who would have thought it possible!) – Angela’s Pickled Carolina Collards. They are tangy, crunchy, just a touch of sweetness (no sugar-it’s the white balsamic vinegar and the tender collards themselves), richly flavored with cardamom and other good things and as hot or mild as you want them.
